General Manager - St Albans
Mad Squirrel is one of the UK's most exciting independent craft breweries. We brew bold, characterful beer and serve it in our taprooms across Hertfordshire and Buckinghamshire — venues where great beer, great food and genuine hospitality come together. We're proud of what we've built, and we're looking for an exceptional leader to help us take it further.
We are looking for a charismatic and driven General Manager to lead our St Albans Taproom. This is a high-profile role at the heart of our operation: you'll own the performance of the site, inspire your team, and be a true ambassador for everything the Mad Squirrel brand stands for.
THE ROLE
As General Manager, the St Albans Taproom is yours to run. You'll have full accountability for its people, performance and guest experience — and the autonomy to make it the best it can be. We'll support you with great products, an experienced head office team, and a brand that people genuinely love.
YOU WILL:
• Own the full bar and kitchen operation — setting standards, leading by example, and holding the team to account.
• Be an authentic and passionate brand ambassador for Mad Squirrel: live and breathe craft beer and bring that energy to every shift.
• Build, develop and inspire your team through hands-on training, coaching and consistent day-to-day leadership.
• Take full P&L accountability — driving revenue, managing labour, conducting stock takes, and steering the site towards its targets.
• Plan and deliver a monthly programme of events that showcase our beer and make the taproom a destination.
• Manage the taproom's social media presence, sharing the story of the site and helping to grow our local audience.
• Ensure the highest standards of cleanliness, presentation, cellar management, and food preparation at all times.
• Collaborate closely with the wider operations team to share best practice and contribute to the business's growth.
ABOUT YOU
We want someone who thrives under pressure, leads with warmth, and has the drive to build something they're genuinely proud of. The ideal candidate will bring:
• At least one year of management experience in hospitality or a similar fast-paced environment.
• A natural ability to lead, motivate and develop a team — you bring people with you.
• Exceptional customer service instincts — you understand what makes a great guest experience and you deliver it consistently.
• Strong commercial awareness: you understand the numbers, take ownership of them, and know how to improve them.
• Excellent organisation and attention to detail — from a well-run rota to a perfectly presented bar.
• A real passion for craft beer and the curiosity to keep learning about it.
• A positive, can-do attitude and the resilience to lead confidently when it matters most.
