A Single Hopped IPA

Brewing a single-hopped IPA is the ultimate tribute to a specific hop variety. With our latest limited release, we chose to create a single hopped IPA with Mosaic, which is one of the most versatile and beloved "super-hops" in the craft beer world. Introduced in 2012, Mosaic earned its name because of the complex, multi-layered "mosaic" of flavours it provides, often doing the work of three or four different hops combined.

The Profile: A Symphony of Flavour

The primary reason to use Mosaic exclusively is its incredible aromatic range. Unlike some hops that are one-dimensional, Mosaic offers a vibrant spectrum:
  • Tropical & Stone Fruit: Intense notes of mango, papaya, and peach.
  • Citrus: Bright bursts of tangerine and pink grapefruit.
  • Earth & Pine: Subtle, herbal undertones and a "dank" resinous quality that provides depth.
  • Berry: A unique blueberry note that has become the hallmark of the variety.

Why People Love It

Beer lovers gravitate toward Mosaic single-hopped IPAs because they offer a high-definition sensory experience. Because the hop is high in alpha acids (providing clean bitterness) and loaded with essential oils (providing aroma), the resulting beer is incredibly cohesive.

Drinkers appreciate the complexity without confusion. In a blend, specific notes can get lost; in a single-hop brew, the drinker can clearly identify that signature profile. It creates a "juicy" profile that feels modern and accessible to new craft beer drinker, yet possesses enough bitterness and earthy backbone to satisfy traditional IPA fans.
