Why and how? To make that special creamy head that is synonymous with great stouts, nitrogen rather than carbon dioxide is used to create the bubbles. Nitrogen bubbles create a foam that is thicker and lasts longer than carbon dioxide and a side product of less carbon dioxide in the beer is that the texture is more velvety and smooth.
So our Shamrock has been canned with nitrogen to create the velvety cream head. Nitrogen sits at the bottom of the can. Before pouring, it needs to be activate.
